Crock Pot Chicken Cacciatore


Ingredients:
  • 8 chicken thighs, boneless, skinless
  • 28 oz can crushed tomatoes 
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 1 clove of garlic, chopped
  • 1 tsp dried oregano 
  • 1 bay leaf
  • mozzarella cheese for topping
  • pasta of choice
Directions:
  1. Place chicken on the bottom of the slow cooker. Add tomatoes, bell pepper, onion, garlic, oregano and bay leaf in the slow cooker 
  2. Cook on low for 8 hours or high for 4 hours
  3. Remove bay leaf, add cheese and serve with cooked linguine noodles
